Tonight’s dinner was pretty simple, I decided that I wanted to make Pizza. I don’t eat much Pizza so when I do it has to be good. But the best part of making it at home means that I can put anything I want on it. Its pretty much a blank canvas and I am the artist. I love to add mushrooms and veggies to my pizza, but I just could not resist putting some chorizo on it.
First I made the dough and let it sit for 2 hours in the oven, ”off” of course because its actually warm enough for the dough to rise. I cooked 2 chorizo links in a pan with diced onions and a bit of garlic, added some cumin, salt, pepper and paprika to taste. I drain the chorizo mixture in a bowl with a paper towel and let it cool. I sliced a few button mushrooms, green bell peppers and some fresh mozzarella. However, I must confess I did not make my own tomato sauce instead I used one that was already made. But you can always make your own. I used about one cup for my pizza and I think it was just enough for the dough.
I place the dough in a lightly greased sheet pan stretching it from the middle moving outwards until it was evenly distributed. I found that you must be a bit patient with this part, but once I was done I was ready to assemble my toppings. I did layers of Chorizo, mushrooms , peppers and the mozzarella, I topped the pizza off with some fresh basil springs and grated parmesan.
After a few minutes dinner was ready! Served the pizza with a salad and viola, No Delivery Here !!!
Pizza dough recipe :
I served this pizza with a quick salad
- 1 head of Romaine lettuce
- 1 tomate diced
- half red onion thinly sliced and rinsed
- 1 pear thinly sliced
- fresh min leaves
- crumble goat cheese
- splash of lemon juice
Honey Balsamic Vinaigrette
- 1/2 cup Balsamic Vinegar
- 1 1/2cup E.V.O.O
- 2 Tbs honey
- 1 t dijon mustard
- 1 clove garlic grated
- salt and pepper to taste
I bake my pizza for 20-25minutes, until golden brown, I also did not have a pizza stone so I place the pan on the lower rack.
Make this with kids they will love it .
