Every now and then I always crave something sweet, sometimes my sweet tooth gets a bit out of hand. So when I am at home I like to bake substituting healthier ingredients into my bake goods. I love having coconut oil on hand whenever possible, its such a great alternative in bake goods. However sometimes using butter is good too.
So this week has been a very busy week for me I haven’t had much time for myself but today was an exception. I got home a bit early today and of course tired and all I wanted to have something sweet after my dinner. I thought of making banana bread which is always a crowd pleaser, but I had some overripe Sweet Plantains that look like they were ready to give in. I couldn’t let perfectly good plantains go to waste!
So I after searching on Pinterest for some sweet plantain recipes I came across a Sweet Plantain cake. This was probably the quickest cake I have ever made. I didn’t want to measure flour I just wanted something quick and somewhat healthy, this was exactly what I was looking for.
This cake contains no sugar just a few simple ingredients and viola !

Notes: I used 3 overripe plantains and I used vanilla paste instead of vanilla extract either is fine.
