So lately the new trend has been “Vegan,” I personally did not know any Vegans until recently. I myself I’m not a Vegan but one of my very close friends “sister” if you will has adopted the Vegan diet and she did so for health reason. I respect the plant base diet and I know its a great thing to eat more of our vegetables and fruits and any other superfoods that we as humans may benefit from. For myself I have tried to make better choices in what I consume but every now and then I love to indulged in something sweet, it has almost become part of my eating regimen where I must have something sweet after my dinner. This is when I must really think about what I’m about to eat.
However thanks to social media there are always amazingly healthiest food trends that are easy to make. One of my favorite people to follow on social media is Vevian Vozmediano a Nurtrition & Life Coach and a great Chef (@fitalicious.life) she is the brains beyond this Amazing Delicious recipe I am sharing with you today!
The recipe is simple and easy to follow and I promise you would not even guess that it was made from Chickpeas.
Peanut Butter Chickpea Squares (Vegan/Grain-Free)

- 2 Cans 15oz, Chickpeas drained & rinsed
- 2 Flax eggs (or 2 regular eggs)
- 1 Cup natural peanut butter
- 2/3 cup coconut sugar
- 1 tsp. baking soda
- 1 tsp.baking powder
- 1 Cup chocolate chips
- Preheat oven to 350f.
- Place parchment paper in a square 8×8 pan.
- Make flax egg.
- Working in batches of two blend all the ingredients together expect for the chocolate chips. Once blended stir in the chips and bake for 25 minutes.
- Cool completely before cutting. Enjoy!
Remember recipes are guidelines and you can customize it to your liking.
Flax egg is a 3:1 ratio
- 1 Tbs. ground Flax seeds
- 2-3 Tbs. of water
Mix together and let it stand at least 5 minutes it will thicken.
